While we do appreciate pizzas of all types, shapes, and sizes, there’s a special taste and texture that woodfired pizza has that’s unlike any other. So, what specifically is “woodfired” pizza and why is it just so dang tasty? Here are the key differences between woodfired and coal-fired pizza:

Wood-burning Oven vs. Coal-burning Oven 

Both ovens run extremely hot, cook pies within minutes, and produce that recognizable char. Woodfired pizza ovens use wood as the fuel for the fire and typically cook at a temperature anywhere between 600 to 800 degrees Fahrenheit, baking at extremely high heat for only a couple minutes. Coal ovens utilize coal to support an even hotter oven; burning as high as 1,000 degrees Fahrenheit. 

Taste 

Woodfired slices are often praised for their smoky and earthy undertones, while coal-fired slices tend to exhibit a “burnt” flavor that some people admire.

Texture & Style

Some diners prefer a more crispy and thin pizza with a chewy crust, meaning coal-fired is likely to satisfy their need for that extra crunch. Coal-fired pizzas are notoriously known for their blackened crusts and often confuse diners who mistake their pizza as being burnt, rather than charred. Wood-burning ovens are a more traditional vessel for creating authentic Neapolitan-style pies with an almost crepe-like middle and pillowy edges. With a crisper crust and chewier center, woodfired pizzas make for a heartier meal and denser pie.
